The round Saibashi offer a nice, wide grip of about 10mm up top. And Hinoki is a great alternative to bamboo, which can often feel slippery.
Saibashi (cooking chopsticks) are an indispensable kitchen tool for frying, sautéing, mixing, stirring, turning and much more. There is no other utensil that works in quite the same way.
Saibashi are much longer than dining chopsticks (Hashi) and help to keep your hand away from steam, splattering oils and high temperature. Saibashi are typically about 29-33cm long, and Hashi are usually about 20-23cm long
The Hinoki Saibashi provide a stable grip and feel great in the hand. It’s recommended that before using to immerse briefly in water, as the grip and feel is much improved.
Hinoki is a well known Cypress tree native to Japan, and for millennia it has been prized and cherished for its strength, the lumber increasing durability some 200 years after felling. In fact, Horyu-ji Temple, built from Hinoki Cypress, was constructed about 1300 years ago, and nearly 65% of the original lumber remains today.
Much of this durability is the result of Hinokitiol, a uniquely anti-microbial natural compound found in the heartwood of the Hinoki tree. What’s more, the cypress wood is highly absorbent and dries quickly, making it quite rot-resistant.
Yamacoh, founded in 1972, is based in Natsugawa, Gifu Prefecture, specializes in natural wooden products. Their Youbi brand can be described as ‘functional beauty.’ Youbi’s wood products are primarily made from Japanese Cypress, Hinoki and Sawara. Wood is not dishwasher safe. Excessive detergent and soap may damage the wood products and natural oils as well.
Please note: Avoid putting away wet. Hand drying with a towel generally works well. Avoid storing in damp, humid or excessively hot areas. And avoid direct sunlight.
