This “small chopping board” (as it says on the board) is a useful addition for small tasks and light work such as cutting a piece of fruit or a piece of cheese. And the small footprint makes transferring items from the board to the pan very easy. 

This board is a great size for kids to work on as well.  

Hinoki is a well known Cypress tree native to Japan, and for millennia it has been prized and cherished for its strength, the lumber increasing durability some 200 years after felling. In fact, Horyu-ji Temple, built from Hinoki Cypress, was constructed about 1300 years ago, and nearly 65% of the original lumber remains today.  

Much of this durability is the result of Hinokitiol, a uniquely anti-microbial natural compound found in the heartwood of the Hinoki tree. What’s more, the cypress wood is highly absorbent and dries quickly, making it quite rot-resistant. 

Hinoki is a medium soft wood, which is excellent for kitchen knives, not too soft nor hard, but an ideal balance of the two. This works particularly well for higher hardness knives, such as carbon steel blades, which are very sharp but need a surface that preserves the fine edge. 

So having a durable, clean and edge-friendly wood like Hinoki, it’s no wonder why this is the choice cutting board (Manaita) of most Japanese chefs.

-Avoid storing the board in damp, humid or excessively hot areas. And avoid direct sunlight.
