Morikatsu Towel 2 Pack

Morikatsu is a unique hybrid of a towel and a sponge. It is highly absorbent, durable and can be used for a variety of kitchen cleaning tasks, but is also a very useful accessory when sharpening knives, as it can both absorb and retain the optimal level of water. Therefore, you can easily wipe your blade clean, as well as squeeze water on your whetstone as needed.  

Morikatsu also works well for cutting board maintenance, both applying moisture as needed to the surface, as well as easily and quickly wiping the surface to remove debris. This is especially important with hinoki wood cutting boards, but works just as well with rubber cutting boards too.

Overall, I love morikatsu because it easily absorbs swarf, the gray-black residue that accumulates on the knife surface as you sharpen. Just as easily, a morikatsu can dampen a wood cutting board, especially hinoki wood boards because they dry quickly. When dry, you can easily cut the cloth into smaller squares, making for a more compact cloth. Highly recommended.
