Sasara & Tawashi Brushes

A sasara is generally described as a kitchen brush used for scrubbing, whisking or mixing ingredients. Sasara were traditionally made from thin bamboo sticks that were tightly bound together with copper, steel or bamboo. With a wide array of uses, some brushes are specifically made for cleaning fish during processing, or scrubbing woks and iron pans, or even mixing ingredients, such as miso into dashi stock.

Another traditional yet popular brush is called a tawashi. Made from the dense fibers of shuro palm (a variety of palm tree) tawashi are made from these natural fibers and formed into a tightly bound coil that's shaped into a variety of sizes. Primarily used for cleaning, tawashi are ideal for scrubbing wooden kitchenware, such as hinoki cutting boards and bamboo steamers, when soap or detergent if often not used.

Another brush offered by Hinoki Kitchen Craft is the smaller yakumiyose brush, which is used when ingredients such as wasabi, daikon or ginger are grated.
