Steaming cookware sold at Hinoki Kitchen Craft is available in two distinct styles. First there is the bamboo steamer, which traditionally is made entirely of bamboo. But models sold here are crafted mostly of high quality hinoki cypress, which produces a wonderful woody, lemon scent while cooking. These artisan crafted steamers feature substantially thicker exterior walls, making it both more durable and better insulated while you cook. The exterior walls of the steamer show the continuous wood grain pattern of hinoki.
And secondly, a similar but distinct steaming vessel, called a seiro, is available here. A seiro steamer is unique to Japanese cuisine and is traditionally crafted with hinoki, so the woody, lemon scent is present too. Crafting this vessel, artisans utilize magewappa, a traditional steam-bending technique, developed generations ago in Akita Prefecture. The lid for this type of steamer sits flat on top of the body.
