Mt Fuji is a home cookware line by Fujinos, featuring SUS430 stainless steel, a popular steel known for its durability and heat conductivity. With a triple layer of steel (two layers of steel surrounding aluminum) the pan heats quickly and stays hot much longer than aluminum alone. The handles for this line of pans are ergonomic and stay cool as the pan heats. Additionally, the rivets inside the pan are shallow, which makes cleaning much easier.
A Yukihira saucepan is a traditional Japanese cooking pot described as having a wide, flat bottom and a shorter overall height, which helps with evaporation. It typically features a curved beak, which helps with pouring. A Yukihira can be used for simmering, stewing, frying, reducing sauces, and much more. With the smaller 16cm and 18mm sizes, they can be useful for a quick blanching too.
Made in Tsubame City in Niigata Prefecture, this region is famous for quality steel production that dates back many decades.
Overall, there are many Yukihira pans that I like, typically the classic design uses aluminum, which heats fast, but can restrict the range of uses. This design is simple, beautiful and is technically superior, as it's three layer, steel clad design retains heat better. This is a saucepan I use at home because it embodies the principles of a simple and elegant design, but has the performance to back it up.
