Sabitoru Rust Eraser Medium

The Sabitoru Medium is the workhorse of the Sabitoru rust eraser line — built for the most common rust situations: light to moderate surface oxidation, discoloration from moisture, and the spotting that carbon steel accumulates with regular use if the blade isn't dried and oiled consistently. It handles the bulk of what most cooks will actually encounter.

The medium grit sits between the Fine and Rough — aggressive enough to cut through visible rust and discoloration quickly, controlled enough that it won't leave deep marks on the blade face with normal use. The eraser format works well for knife maintenance: the compact block fits cleanly in hand, and the flat face makes it easy to work along the blade with consistent pressure. Stroke along the grain of the steel, not across it. Rinse and dry the blade thoroughly after use.
